Method

  1. Dough

Mix all ingredients on low speed for 5 minutes using a flat beater. Leave the dough to rest for about 15 minutes. Shape the dough into 16 g balls using an ice cream scoop, piping bag or a dedicated depositor. Fry in fat at 170 °C for 8 minutes. The dough must be fried within 3 hours of being prepared.

  2. Filling

Mix Delice Patissiere with the water on high speed for about 4 minutes using a whisk. Add the Pailette to the mass just before filling and mix gently. The mini doughnuts can be filled with any stable filling, e.g. Multifruit Marmalade CL, plum preserve with apples, ZEELAsoftSER cheese filling, cream fillings from the Presta line, fruit and vegetable fillings from the Fruitful line, or Delice Patissiere custard cream.

  3. Glaze

Gently warm the fondant and mix it with a little water. Glazing can be done by hand or mechanically on glazing machines. Before the glaze sets, decorate the doughnuts with desiccated coconut. Satina Pro products, chocolate-based glazes Arabesque or Fondant Ready fondant can be used for glazing and decoration. Before the glaze sets, the mini doughnuts can be sprinkled or rolled in Pailette or BonTon decorative sprinkles, crushed nuts or desiccated coconut.
