Method
- Dough
Mix all ingredients on low speed for 5 minutes using a flat beater. Leave the dough to rest for about 15 minutes. Shape the dough into balls weighing 16 g using an ice cream scoop, a piping bag or a dedicated depositor. Fry in fat at 170°C for 8 minutes. The dough must be fried within 3 hours of preparation.
- Filling
Combine ZEELAsoftSER with Fruitful Veggie Beetroot. Fill the doughnuts with about 7 g of filling per doughnut.
- Filling
The mini doughnuts can be filled with any stable filling, e.g. Multifruit Marmalade CL, Plum Jam with Apples, ZEELAsoftSER cheese filling, cream fillings from the Presta line, fruit and vegetable fillings from the Fruitful line, or Delice Patissiere custard cream.
- Glaze
Gently warm the fondant and mix it with Fruitful Veggie Beetroot. Glazing can be done by hand or mechanically on glazing machines. Before the glaze sets, decorate the doughnuts with BonTon Swirls, strawberry flavour.
- Glaze
Products from the Satina Pro line, chocolate-based glazes Arabesque or Fondant Ready fondant can be used for glazing and decorating. Before the glaze sets, the mini doughnuts can be sprinkled or rolled in Pailette or BonTon decorative sprinkles, crushed nuts or desiccated coconut.
