Method

  1. Caramel cake

Mix all ingredients on low speed for about 4 minutes (using a flat beater). Dose the batter, 280 g per piece, into 4 tins lined with shortcrust dough; pour the remaining batter into a ring about 16 cm in diameter and bake it, keeping it for decoration.

  2. Pear filling

On top of the batter, pipe the pear filling in a spiral starting from the centre, 200 g per piece. Bake the tarts prepared this way at 180 °C for about 50 minutes, then chill after baking.

  3. Caramel custard cream

Dissolve the kajmak in the warm milk. Whip the water, Rosette, dissolved kajmak and Napoli cream for about 4 minutes. Pipe the prepared cream in dots onto the surface of the baked tart, about 500 g per piece. Chill the whole tart. Grate the remaining caramel cake through a sieve onto the chilled cream to form a layer of fine caramel crumble.

  4. Decoration glaze

Combine the kajmak with the milk, then warm gently in a microwave; decorate the tarts with the glaze prepared this way.
