Method

  1. Cocoa disc

Mix all ingredients on high speed for about 8 minutes (using a whisk). Spread the mass evenly on a silicone mat. Bake at 240°C for about 5 minutes. Cool, then cut out twenty discs about 6.5 cm in diameter.

  2. Light disc

Mix all ingredients on high speed for about 8 minutes (using a whisk). Spread the mass evenly on a silicone mat. Bake at 240°C for about 5 minutes. Cool, then cut out twenty discs about 6.5 cm in diameter.

  3. Strawberries

Slice the strawberries. Line moulds about 6.5 cm in diameter and about 4 cm deep with cling film and line them with the strawberry slices. Place the cocoa discs in the moulds.

  4. Strawberry cream

Whip the chilled cream. Dissolve the Zeesan thoroughly in the water. Add the whipped cream in portions and mix gently until combined. Spread 1/2 of the cream evenly in the moulds on the sponge and press down with a light disc. Spread the remaining cream (about 25 g per piece) and level it. Chill.

  5. Decoration

Decorate as desired. Whip the chilled Rosette and dust the surface of the cakes with Mont Blanc.
