Method

  1. Sourdough Donut

Add all ingredients to a spiral mixer and mix for 2 minutes on slow speed and then 12-15 minutes on fast speed.

  2. Sourdough Donut

Place the dough onto a floured surface, cover and let it rest for 10 minutes.

  3. Sourdough Donut

For ball donuts you can either process on a BDM to create 50 g pieces, or sheet the dough (rest for a further 10 minutes) and cut out with a round cutter to achieve 50 g pieces.

  4. Sourdough Donut

For ring donuts sheet the dough (rest 10 minutes) and then cut out with a ring donut cutter.

  5. Sourdough Donut

    Proof at 38 °C / 60-70 RH for approximately 90 minutes.

  6. Sourdough Donut

Remove from the proofer and allow to air dry for 10 minutes.

  7. Sourdough Donut

For ring donuts fry at 170-180 for 60-90 seconds per side.

  8. Sourdough Donut

For ball donuts fry at 170 °C for 2.5 minutes each side.

  9. Custard Filling for Ball Donuts

To fill the ball donuts you can choose Vanilla Crème Filling, which is a ready-to-use custard.

  10. Custard Filling for Ball Donuts

Another option is to make custard with SuCrem Nova Plus: place the mix and the cold water into a mixing bowl fitted with a whisk and mix for 1 minute on slow speed and then 3-4 minutes on fast speed.

  11. Custard Filling for Ball Donuts

Cool down the SuCrem mixture and it will be ready to pipe.

  12. Walnut Icing

Place the Glossy Icing into a bowl and warm in a microwave to achieve a good dipping consistency (maximum 45 °C).

  13. Walnut Icing

Create the walnut icing by combining Dawn® Glossy Icing - White and a small amount of Dawn® Walnut Compound.

  14. Assembly: For ring donuts, take the cooled ring donuts, dip into the prepared warm walnut icing and take off the excess.

  15. Assembly: For ball donuts, make a hole in the side of the donut with a skewer.

  16. Assembly: Pipe about 20 g of either of the custards into the ball donut.

  17. Assembly: Then dip in the walnut icing and take off the excess.

  18. Assembly: To finish both donuts place some pecans and walnuts on top for decoration.
