Method

  1. Honey cake

Mix all ingredients on low speed for about 5 minutes (using a flat beater). Deposit the batter into a frame of about 40 x 60 cm. Bake at 180°C for about 50 minutes. Cool. Cut into four layers of equal thickness.

  2. Soaking syrup

Dissolve the sugar completely in hot, boiled water. Soak the honey cake layers.

  3. Ganache

Bring the cream to the boil, add the chopped Scaldis and mix until the ingredients are completely combined. Spread the ganache on the first layer and press lightly with the second layer.

  4. Pear cream

Dissolve Zeesan completely in the water (whip the chilled cream first). Add the whipped cream in portions and mix gently until combined. Spread part of the cream (about 450 g) on a honey cake layer and press with the next layer. Spread evenly another part of the cream (about 450 g). Press with the last layer and spread the remaining cream (about 450 g) on top.

  5. Whipped-cream-type cream

Whip the chilled Rosette. Spread the cream on the surface of the cake. Chill.

  6. Decoration: decorate as desired.
