IREKS Crumb Softener is a clean-label, enzyme-based bread improver used at 1% on flour weight to produce a fine, regular, soft and moist crumb with excellent freshkeeping.
Suitable for plastic and dry doughs, it ensures problem-free machine processing in high-volume production of sliced breads, soft rolls and enriched doughs. Supplied in a 25 kg paper bag.
