Method
- Sponge
Mix all ingredients on low speed for about 5 minutes using a flat beater. Spread the batter into a ring about 18 cm in diameter. Bake at 180°C for about 35 minutes. Cool and divide into two layers of equal thickness. Place one layer in a ring of the same size.
- Cheesecake cream
Whip the cheesecake curd cheese. Dissolve Zeesan thoroughly in the water. Add the whipped curd cheese in portions and mix gently until combined. Spread the cheesecake cream (about 500 g) evenly over the surface of the sponge layer and press lightly with the second layer. Spread the remaining cream on top. Level.
- Fruit
Drain the apricots from the syrup. Cut the fruit into slices and spread evenly over the surface of the cake. Chill.
- Lemon jelly
Dissolve the jelly in hot, boiled water and leave to cool. Pour the setting jelly over the cake. Chill.
- Cream decoration
Whip the chilled Rosette. Once the jelly has set, remove the cake from the ring and decorate the sides with the whipped Rosette.
Decoration: decorate as desired.
