Method

  1. Sponge

Mix all ingredients on low speed for about 4 minutes (using a flat beater).

  2. Sponge

Dose the batter into 4 rings of 15 cm diameter, about 230 g per piece.

  3. Sponge

Bake at 180°C for about 25 minutes.

  4. Sponge

After the sponges have cooled, cut each into two layers. Trim one of them so it is about 1 cm smaller in diameter. Place the larger layers in the 4 rings of 15 cm diameter, previously lined with ring foil.

  5. Orange mousse

Whip the chilled cream. Dissolve Zeesan thoroughly in the water. Add the whipped cream in portions and fold gently until combined.

  6. Orange mousse

Pipe the finished mousse with a piping bag onto the prepared sponge layers in the rings, about 125 g per piece. Smooth with a scraper. Chill.

  7. Fruit

Drain the peaches and cut into cubes of about 1 cm. Spread the fruit over the orange mousse, about 75 g per piece. Chill.

  8. Neutral jelly

Dissolve the jelly in hot water and cool to about 20°C. Pour the jelly over the peaches spread earlier. Chill.

  9. Assembly: pipe the remaining mousse onto the chilled jelly, sinking the smaller sponge layers into it. Smooth the cakes over with mousse. Chill.
