Method
- Tartlets with filling
Dose Frutta Top Strawberries in Gel into the tartlets (about 15 g per piece).
- Nut cream
Whip the chilled cream. Wash and dry the strawberries.
- Nut cream
Liquefy the CA White Milk Cream to a temperature of about 35-37°C by heating it in a microwave in bursts of up to 20 seconds, alternated with vigorous stirring. (Alternatively, soften it in a proofer or in a container over a water bath.)
- Nut cream
Dissolve the Zeesan thoroughly in the water. Add the CA White Milk Cream and combine thoroughly.
- Nut cream
Add the whipped cream in portions and fold in gently until combined.
- Nut cream
Pipe the cream onto the filled tartlets (using a piping bag with a round nozzle; about 55 g per piece).
- Nut cream
Cut the washed strawberries into quarters and place them on the cream (about 20 g per piece). Freeze.
- Decoration
Decorate as desired. Heat the gel (in a gel melter or a pot) to about 70°C. Glaze the frozen tartlets with cream.
