Method
Place Macphie Sponge Mix and water into a mixing bowl with a whisk and whisk for 1 minute on slow speed, scrape down.
Whisk for 8 minutes on medium speed.
Deposit 1 kg into a greased and lined 18″ x 30″ 4-sided tray and spread evenly.
Bake for 5-6 minutes at 240°C.
Prepare the ice cream into a log shape by putting it into greaseproof paper and rolling until the desired shape is achieved.
Turn out the sponge onto sugared paper or cloth.
Once slightly cooled, spread Macphie ku-li® Raspberry fruit coulis onto the sponge sheet.
Roll up the ice cream log tightly in the sponge, trimming the sponge as required.
