Birthday cake — a Macphie recipe, makes 2 sponges. Uses Macphie Sponge Mix 10 kg.

Ingredients

| Macphie Mactop® Extra | 1 litre |
| Macphie Sponge Mix 10 kg | 500 g |
| Water | 250 g |
Method
Add the water to Macphie Sponge Mix and whisk on slow speed for 1 minute.
Scrape down and whisk on middle speed for 10-15 minutes or top speed for 5-10 minutes, followed by 1-2 minutes on slow speed.
Deposit 400g into 8” round or square cake tin (you will need 2). Bake at 175°C for 20-25 minutes.
Leave to cool.
Using a planetary mixer whip the Macphie Mactop Extra® on medium speed until it forms soft peaks (around 5-6 minutes).
Divide the cream into however many colours you will be using, including for the sandwich layer.
Flavour and colour Macphie Mactop Extra® as desired (paste colours are preferred).
Sandwich whipped Macphie Mactop Extra® between the layers then decorate.
