Method

  1. Sponge

Mix all ingredients on low speed for about 3-4 minutes using a flat beater.

  2. Sponge

Spread the batter on a 60 x 40 cm tray. Bake at 180°C for about 45-50 minutes. After baking, cool and cut into two layers of equal thickness.

  3. Raspberry jelly

Soak the gelatine in cold water. Cook the Paletta Neutral Paste together with the raspberries and combine with the gelatine. Cool the jelly and pour it over the strawberry mousse.

  4. Strawberry mousse

Whip the chilled cream together with 400 g of buttermilk. Dissolve the Zeesan thoroughly in 400 g of buttermilk. Add the whipped cream in portions and fold gently until combined. Divide the mixture into two equal portions.

  5. Assembly: spread 1400 g of the strawberry mousse evenly over the first sponge layer and pour the raspberry jelly over it. Spread gently and cover with the second sponge layer. Spread the remaining strawberry mousse evenly on top.

  6. Decoration

Cut the strawberries into small pieces and scatter them over the whole surface of the cake. Chop the mint finely and scatter it over the surface. Chill everything and cover with Paletta Neutral Gel using a pastry gel applicator.
