Method

  1. Short pastry

Mix all ingredients on low speed for about 5 minutes using a flat beater. Roll out a sheet of about 40 x 60 cm. Bake at 190°C for about 10 minutes.

  2. Honey cake

Mix all ingredients on low speed for about 5 minutes using a flat beater. Spread the mass into a frame of about 40 x 60 cm and level it.

  3. Coconut mass

Mix the sugar, desiccated coconut and egg white, add the Vankrem (as a powder). Mix until a uniform mass is obtained.

  4. Apricot filling

Pipe the Fruitful Apricot diagonally, alternating with the coconut mass, across the surface of the honey cake (using a piping bag). Bake at 180°C for about 40 minutes. Allow to cool.

  5. Jam layer

Spread the jam evenly over the short pastry and press the honey cake with the apricot filling and coconut mass onto it.

  6. Decoration

Decorate as desired. Heat the Paletta Glaze in a glaze heater at about 90°C until completely liquefied. Cover the surface of the cake with the glaze and sprinkle with flaked almonds.
