Method

  1. Sponge

Mix all ingredients on high speed for about 10 minutes (using a whisk). Dose the batter into two rings about 17 cm in diameter. Bake at 180°C for about 35 minutes. Cool and cut each into two discs of equal thickness.

  2. Cranberry jelly

Bring all ingredients to the boil and combine thoroughly using a blender. Spread the hot mass on the first disc and press gently with the second one. Freeze.

  3. Yogurt cream

Whip the chilled cream. Dissolve Zeesan thoroughly in the water. Add the whipped cream in portions and mix until combined. Place two rings about 20 cm in diameter on a silicone mat. Dose the cream into the rings (up to half of their volume). Place the frozen discs layered with jelly into the rings with the cream, press gently and level the surface. Freeze.

  4. Cranberry-flavoured jelly

Dissolve the jelly in hot, boiled water. Add red colouring and cranberry flavouring and mix thoroughly. Cool. Turn the frozen cakes upside down and remove them from the rings. Wrap the cakes in ring foil so that it protrudes above the surface of the cake (about 2 cm). Pour the setting jelly over the frozen cake. Chill.
