Method

  1. Chocolate sponge

Mix all ingredients on low speed for about 5 minutes using a flat beater. Spread the batter into a frame measuring about 30 x 40 cm. Bake at 180°C for about 30 minutes. Cool and divide into 2 layers of equal thickness (about 1.5 cm).

  2. Raisins in rum

Soak the raisins in the rum (soaking for about 12 hours is suggested). Drain the raisins, keeping the liquid (rum).

  3. Soaking syrup

Combine the cooled brewed black tea with the rum drained from the raisins. Soak the sponge layer placed in the frame with half of the soaking syrup.

  4. Cream

Whip the chilled cream. Dissolve Zeesan thoroughly in the water. Add the whipped cream in portions and mix gently until combined. Spread half of the cream (about 700 g) evenly over the layer and press gently with the second layer. Soak the cake with the remaining soaking syrup and spread the rest of the cream (about 700 g), level it. Arrange the raisins on the surface of the cake. Chill.

  5. Decoration

Apply Paletta Neutral Gel to the cake using a compressor. Decorate as desired.
