Method
- Poppy seed sponge
Mix all ingredients on low speed for about 4 minutes using a flat beater.
- Poppy seed sponge
Soak the raisins in lukewarm water for about 10 minutes and chop the walnuts. Add the drained raisins and the walnuts to the poppy seed batter and mix until uniform.
- Poppy seed sponge
Spread the batter into a frame of about 30 × 40 cm and bake at 180°C for about 50 minutes. Cool and cut into two layers of equal thickness.
- Cream
Whip the chilled cream. Dissolve the Zeesan thoroughly in the water. Add the whipped cream in portions and gently fold until combined. Spread part of the cream (about 600 g) evenly over the sponge layer.
Almond paste: roll out the almond paste (Perła) to about 30 × 40 cm and lay it on the cream. Spread another part of the cream (about 600 g) on top. Press the whole gently with the second sponge layer. Spread the remaining cream (about 250 g) evenly on top. Chill.
- Decoration
Bring the cream to the boil, add the Satina and combine thoroughly with a hand blender, taking care not to aerate the mass. Pipe uneven decorative stripes on the surface of the cake using a piping bag. Decorate as desired.
