Method

  1. Shortcrust bases

Mix all ingredients on low speed for about 3 minutes using a flat beater. Roll the shortcrust dough out to a thickness of about 0.3 cm. Use it to line sixteen moulds, about 6 cm in diameter, for baking the bases. Bake at 190°C for about 10 - 15 minutes.

  2. Pepper jelly

Bring all ingredients to the boil and pour into 16 silicone moulds about 3 cm in diameter. Freeze.

  3. Pepper jelly coating

Soak the gelatine in the water. Liquefy the soaked gelatine and combine it with the Paletta Cold. Coat the surfaces of the frozen jellies with the Paletta Cold mixture.

  4. Thyme mousse

Whip the chilled cream. Soak the gelatine in the water. Bring the milk with the thyme to the boil, add the soaked gelatine and pour over the Arabesque chocolate. Gently combine the whipped cream with the liquefied chocolate and mix. Chill until the consistency is suitable for piping. Pipe the mass into the bases (about 50 g per piece). Chill. Place the pepper jellies on the cream.
