Method

  1. Sesame bases

Mix all ingredients on low speed until combined, using a flat beater. Roll the dough out to a thickness of about 0.3 cm and line four tart tins about 24 cm in diameter with it.

  2. Cheese filling

Mix all ingredients on medium speed for about 5 minutes, using a whisk. Spread the mass onto the sesame bases (about 310 g per tart).

  3. Pears

Slice the pears and arrange them on the cheese mass (about 250 g per tart).

  4. Chocolate cake

Mix all ingredients on low speed for about 4 minutes, using a flat beater. Spread the mass over the pears (about 380 g per tart).

  5. Red currant

Arrange the currants on the surface of the tarts (about 50 g per tart). Bake at 175°C for about 50 minutes. Leave to cool.

  6. Decoration

Decorate as desired. Combine the Paletta Neutral Paste with the water and bring to the boil. Cover the surface of the tarts with a thin layer of the glaze (using a brush or a pastry glazing tool).
