Method

  1. Brownie base

Mix all ingredients on low speed for about 3 minutes using a flat beater. Spread the mass into a frame of about 40 x 60 cm. Bake at 180°C for about 25 minutes. Allow to cool.

  2. Sponge sheet

Mix all ingredients on high speed for about 6 - 8 minutes using a whisk. Spread the mass evenly on a silicone mat of about 40 x 60 cm. Bake at 240°C for about 5 minutes. Allow to cool.

  3. Creme Brulee

Heat the cream. Disperse the Creme Brulee in the milk and pour it into the hot cream. Heat everything, stirring continuously (do not aerate) so that it does not burn, and bring to the boil. Add the Frutafill Raisins in Rum and mix in thoroughly. Pour the mass onto the cooled base placed in the frame and press gently with the sponge sheet. Chill.

  4. Cream

Whip the chilled cream. Dissolve the Zeesan thoroughly in the water. Add the whipped cream in portions and mix gently until combined. Spread the mass evenly over the cake. Chill.

  5. Decoration

Decorate as desired. Cover the surface of the cake with Paletta Cold.
