Method
- Sponge
Mix all ingredients on low speed for about 5 minutes using a flat beater. Deposit the batter into a frame of about 40 × 60 cm. Bake at 180°C for about 45 minutes. Cool. Cut into two layers of equal thickness.
- Plum jam
Spread the plum jam evenly over the first sponge layer.
- Caramelised nuts
Make a caramel from the sugar and honey. Add the hazelnuts and almonds, caramelise them and add the butter. Mix and chill. When chilled, chop. Spread over the layer with the jam.
- Cream
Whip the chilled cream. Liquefy the kajmak in a water bath or in a microwave. Combine the Bava with the water and fold in the whipped cream. Combine this mass with the kajmak and mix gently until combined. Spread half of the cream (about 1500 g) over the layer of caramelised nuts and press gently with the second sponge layer. Spread the remaining cream (about 1500 g) on top. Chill.
- Glaze
Spread the Paletta Cold evenly over the surface of the cake.
- Decoration
Sprinkle the Wirki over the surface of the cake. Decorate as desired.
