Method

  1. Chocolate disc

Mix all ingredients on medium speed for about 5 minutes using a flat beater. Spread the batter into a frame of about 30 x 40 cm. Bake at 180°C for about 20 minutes. Cool and cut out discs about 7 cm in diameter.

  2. Chocolate mousse

Whip the chilled cream (*). Soak the gelatine in the water (**). Bring the apple juice to the boil, add the gelatine and pour it over the chocolate. Blend everything together with a hand blender. Cool to about 38°C and gently fold in the whipped cream. Pipe the finished mousse into silicone moulds (about 50 g per piece). Freeze.

  3. Currant jelly

Bring all ingredients to the boil and mix thoroughly. Dose the jelly onto the frozen mousse in the silicone moulds. Freeze.

  4. Velvet spray

Melt Arabesque chocolate with the oil. Remove the frozen desserts from the silicone moulds and coat them with the velvet spray using a spray compressor (ready-made velvet spray in an aerosol can may be used).

  5. Assembly: place the finished dessert elements on the chocolate cake discs.

  6. Decoration: decorate to taste.
