Method

  1. Sponge

Mix all ingredients on low speed for about 5 minutes (using a flat beater).

  2. Sponge

Pour the batter into three rings (up to 3/4 of their height) with diameters of about 14 cm, about 20 cm and about 26 cm.

  3. Sponge

Bake at 175°C for about 20 minutes. Allow to cool. Cut each ring into three discs of equal thickness.

  4. Mascarpone cream

Whip the chilled cream with the vanilla seeds. Aerate the mascarpone.

  5. Mascarpone cream

Dissolve the Zeesan thoroughly in the water and combine with the aerated mascarpone. Add the whipped cream in portions and mix gently until combined.

  6. Assembly: spread part of the cream evenly over the 26 cm disc (the cream should be as high as one disc) and gently press a second disc on top. Spread another portion of cream of the same thickness on top and gently place the last disc on it. Level the sides. Spread a thin layer of cream on the third disc and freeze the whole.

  7. Assembly: assemble the other two parts of the cake (20 cm and 14 cm) in the same way. Stack the frozen cakes on top of each other, starting with the cake of the largest diameter.

  8. Fruit

Decorate the assembled cake with fresh fruit (raspberries, strawberries, blueberries). Decorate as desired.
