Method

  1. Shortcrust

Mix all ingredients on low speed for about 3 minutes using a flat beater. Roll the dough out to a thickness of about 0.4 cm and line 3 tart tins of about 18 cm diameter with it. Bake at 190°C for about 15 minutes. Leave to cool.

  2. Brownie

Mix all ingredients on low speed for about 3 minutes using a flat beater. Spread the mass evenly in the tart shells (about 230 g per tart).

  3. Fruit

Scatter frozen raspberries over the tarts (about 50 g per tart). Bake at 170°C for about 25 minutes. Leave to cool.

  4. Creme Brulee

Heat the cream. Disperse the Creme Brulee in the milk and pour it into the hot cream. Heat everything, stirring constantly (do not aerate) to prevent scorching, and bring to the boil. Pour the cream evenly over the tarts (about 310 g per tart). Chill.

  5. Glaze

Combine the Paletta Neutral Paste with the water and heat. Cover the surface of the tarts evenly with the glaze (about 115 g per tart).

  6. Decoration: decorate as desired.
