Method
- Cheese mass
Mix all ingredients except the Soft Krem on medium speed until a smooth mass is obtained (using a whisk). Add the Soft Krem and mix until the consistency is uniform. Spread the mass evenly into four ballerina baking tins about 16 cm in diameter (about 380 g per piece).
- Cake
Mix all ingredients on medium speed for about 4 minutes (using a flat beater). Pipe the cake batter onto the cheese mass (using a piping bag, about 95 g per piece). Bake at 180°C for about 40 minutes. Allow to cool.
- Cream
Heat the cream. Dissolve the Creme Brulee in the milk and pour it into the hot cream. Heat everything, stirring constantly (do not aerate) to prevent burning, and bring to the boil. Pour the mass evenly into the hollows in the cake over the cheese mass (about 80 g per piece).
- Decoration
Decorate as desired. Drain the mandarins and arrange them on the surface of the cream.
