Method
- Slof
Briefly mix all ingredients into a short dough, then cool. Process again and add extra water if necessary. Roll out to 7 mm and cut out with a 16 cm slof ring.
- Bake-stable yoghurt filling
Whisk all ingredients at the highest speed for 3 minutes. Pipe about 40 g per slof. Bake in a deck oven at 180°C (rotary oven 160°C) for 25-28 minutes.
- Strawberry
Pipe about 25 g Delifruit Strawberry onto the baked slof.
- White chocolate bavaroise
Mix the fond with the water. Fold the lightly whipped cream into the fond in two stages. Pipe about 100 g per slof, level off or dab roughly. Cool, then freeze.
- Decorgel Plus white
Dissolve the Sanatine R in the water. Add this mixture to the Decorgel (38°C).
Assembly: finish with the white glaze (about 20 g per slof) and decorative lips.
