Method

  1. Fruit sponge

Mix all ingredients on low speed for about 5 minutes (using a flat beater). Spread the batter into a frame of about 30 × 40 cm. Bake at 180°C for about 30 minutes. Cool and divide into two layers of equal thickness. Place one layer in a frame of the same size. Freeze.

  2. Rhubarb jelly

Peel and cut the rhubarb. Soak the gelatine in water (about 60 g). Bring the rhubarb, water (about 200 g) and Paletta Neutral Paste to the boil and combine using a blender. Pour the jelly onto the frozen sponge layer and cover with the second layer. Freeze.

  3. Cream

Mix all ingredients on high speed for about 4 minutes (using a whisk). Spread the cream evenly over the cake.

  4. Fruit

Drain the apricots from the syrup and cut into slices. Arrange the fruit on the surface of the cake.

  5. Orange jelly

Dissolve the jelly in hot, boiled water. Cool. Pour the setting jelly over the fruit and leave until completely set.

  6. Decoration: decorate as desired.
