Method
- Coffee sponge disc
Mix all ingredients on medium speed for about 5 minutes (using a flat beater). Spread the mass into a ring about 15 cm in diameter. Bake at 180 °C for about 10-15 minutes. Cool and cut into two discs of equal thickness.
- Cardamom cream
Whip the chilled cream (175 g). Soak the gelatine in the water.
- Cardamom cream
Bring the cream (75 g) to the boil with the cardamom. Add the soaked gelatine and pour over the Arabesque chocolate.
- Cardamom cream
Combine the mass with the whipped cream and spread evenly into two rings about 15 cm in diameter and about 2 cm high (about 200 g each). Freeze.
- Coffee cream
Whip the chilled cream. Dissolve the Zeesan thoroughly in the water. Add the whipped cream in portions and mix gently until combined.
- Coffee cream
Spread 1/2 of the cream evenly into two rings about 17 cm in diameter, placed on a coffee bean pattern mat (Silikomart Coffee - Bean Silicone; about 260 g each). Place the frozen cardamom cream element in the centre of the cream, then spread the remaining coffee cream on top (about 260 g each). Press down with a coffee sponge disc. Freeze.
Decoration: decorate as desired. A velvet effect can be sprayed onto the frozen cake using a compressor (or use a ready-made velvet spray).
