| Dawn Lemon Cake Mix with Fruit Pieces 12.5 kg | 1 kg |
| Ready-to-Use Frosting, Vanilla – 12 kg | 500 g |
| Sugar | 100 g |
| Butter | 50 g |
| Gin (or elderflower cordial) | 40 ml |
| Eggs | 2 |
| Lemon juice | 5 ml |
| Water | 500 g |
Method
Bake: Mix 1 kg cake mix with 500 g water into a smooth batter and put into 3 x 7 cm tin moulds to bake at 180 degrees for 15–20 minutes.
Lemon curd: Add the lemon juice, gin and sugar to the pan and bring to the boil, then take off the heat and beat in the eggs. Return to the heat and cook until thick, then gradually add the butter.
Assemble: On each layer of sponge place a thin layer of curd and frosting.
Finish: Once the cake is assembled, spread a thin layer of vanilla frosting around the outside of the cake to create a blank canvas for the artwork.
Frosting: Create three different colours of frosting using food colouring of your choice and place each coloured frosting into a piping bag. A teaspoon is very handy for this effect.
Pipe a dot of your chosen colour and, with a teaspoon, flatten one half of the dot, then get creative.
